Camellia Loggia NPC Knowledge suggests grinding the harvested Potato to make powder.

2. Select Grinding
3. Grind 1 Potato to make Potato Flour Knowledge Item
4. Bring Potato Flour to Camellia Loggia

most of the crops will be used for cooking.

or mix them with water to make dough.
